HOT POTATO SALAD
I made this for DH Fathers day
2lbs baby potatoes quartered
1/2 lb bacon diced1/4 cup shallots
1/4 cup chives chopped
1/4 cup parlsey chopped
1tsp fresh oregano chopped
1tsp fresh thyme chopped
1/4 cup fresh/frozen peas
2 tbls dijon mustard
1/4 cup olive oil
1/4 cup white vinegar
Put potatoes in pot and cover with cold water 1 inch over the potatoes. Cover and cook on high until boiling remove cover and cook until tender.
In a skillet cook bacon till crisp add shallots. Add thyme, oregano, mustard. Stir till combined. Add oil and vinegar. Stir until slightly reduced and combined.
Add peas to poatoes right before draining. Drain well. Add to bacon mixture and stir until potatoes are coated add chives and parsley.
Serve warm, room temp or cold.
